Two classes can teach pad thai and green curry yet feel completely different. The setting, group size and ingredient education often matter more than the number of recipes.
Do you want ingredient context?
Choose a morning or market-led class if you want to understand herbs, sauces, fruit and produce before cooking. It turns a recipe lesson into a piece of cultural orientation.
Check who actually cooks.
Individual stations and one-person-one-wok formats are better for learning than a demonstration where the group mostly watches. Ask how many dishes you personally prepare.
Arrive hungry.
A serious tasting tour can replace a full meal several times over. Do not book a big lunch immediately beforehand, and flag allergies or dietary restrictions before the tour begins.
Regional beats generic.
In Chiang Mai, look for khao soi and northern flavours. In Phuket, seek southern or heritage dishes. The point of travelling to cook is learning something tied to the place.
