Thailand does not have one seafood scene.
The Andaman and Gulf coasts feed hundreds of very different dining rooms. Some are polished enough for an anniversary. Others are wooden platforms over mudflats where the tide, fishing boats and plastic chairs are the décor. The best meal is not always the most expensive one: it is often the place that knows exactly what landed nearby and does the least damage to it.
Think beyond lobster. Blue swimming crab, squid, cuttlefish, prawns, grouper, snapper, sea bass, oysters, cockles, mussels and local shellfish all appear in Thai coastal cooking, then change character depending on whether the kitchen reaches for lime and chilli, turmeric, black pepper, tamarind, curry powder or a charcoal grill.

Availability moves with weather, season, fishing restrictions and what boats actually land. That variability is a feature, not a problem.






Choose a coastline before you choose a restaurant.

Hua Thanon on Samui, Rawai in Phuket, Khao Takiab south of Hua Hin, Bang Por on Samui and the smaller coastal communities of Trat all make more sense when you see the boats, piers, markets and kitchens as one system.
These places are not frozen in time. Rawai, for example, has become a major visitor attraction. The useful distinction is not “touristy versus authentic”; it is whether the seafood is transparent, well handled, fairly priced and cooked by a kitchen that understands the catch.

Rawai is the clearest version of seafood as an activity.

Four habits that improve the meal.
For crab, lobster, large prawns and whole fish, ask the unit price and approximate total before cooking.
Mix textures: one steamed dish, one grilled, one curry or soup, one vegetable dish and rice.
Fresh availability changes. Thailand also uses seasonal fishery-management closures in parts of both the Gulf and Andaman coasts.
Nam jim seafood is brilliant, but taste the fish first. The freshest catch should not need to disappear under chilli and lime.
Sometimes you should pay for the table by the water.
A mangrove shack and a polished sunset restaurant are not competitors. They solve different evenings. For a proposal, anniversary or one memorable holiday dinner, the setting can be part of the value — just make sure the kitchen earns its half of the bill.
Before you order
Is seafood cheaper outside Phuket and Samui?
Often, but not automatically. Resort location, species, size and whether seafood is sold by weight matter more than the province name. Local restaurants in Trat, Prachuap and parts of Chonburi can offer excellent value, while premium lobster can be expensive anywhere.
What is the safest order if I do not know Thai seafood?
Start with a whole fish steamed with lime, grilled prawns, a crab dish, stir-fried morning glory and rice. That gives you several techniques without needing obscure ingredients.
What should I ask when seafood is priced by weight?
Ask the price per kilo or per 100 grams, the approximate weight of the piece you are choosing, and whether cooking or service carries an extra fee.
Are fishing villages automatically better?
No. A working coast can shorten the supply chain, but handling, storage and cooking still matter. Busy turnover, clean tanks or ice, transparent pricing and a confident kitchen are better signals than rustic décor.
Can I catch my own dinner?
Fishing trips and resort catch-and-cook experiences exist around Thailand, but rules vary by area and marine protections matter. Use a properly operated local trip and never assume fishing is permitted around reefs, national parks or protected zones.
