      Ingredients

      • 500 g Chicken Breastbite-size pieces
      • 100 g roasted cashews
      • 1 onionwedges
      • 1 Bell Pepperpieces
      • 4 dried chillies
      • 2 tbsp oyster sauce
      • 1 tbsp soy sauce
      Preparation notes

      Measure and prepare every ingredient before starting. Thai cooking often moves quickly once the pan is hot.

      Method

        Mix sauce

        Combine oyster sauce, soy sauce, sugar and a splash of water.

        Cook chicken

        Pat the firm tofu dry, then stir-fry chicken until nearly cooked.

        Add vegetables

        Add onion, pepper and dried chilli.

        Glaze

        Pour in sauce and toss until glossy.

        Finish

        Fold in cashews and serve.

      What it tastes like

      Savoury, slightly sweet and nutty with mild dried-chilli warmth.

      Make it milder

      Reduce fresh chillies and chilli paste, remove seeds, and serve extra chilli separately.

      Use readily available equivalents while preserving the balance of salty, sweet, sour and aromatic flavours.

      Replace meat or seafood with firm tofu, mushrooms or mixed vegetables and use vegetarian sauces.
