      Ingredients

      • 800 g Pork Mincewell chilled
      • 150 g pork fatfinely diced
      • 3 stalks lemongrassvery finely minced
      • 8 makrut lime leavesfinely shredded
      • 3 tbsp red curry paste
      • 2 tbsp fish sauce
      • 1 tsp ground turmeric
      • 20 g fresh corianderchopped
      • 2 m sausage casingrinsed
      Preparation notes

      Prepare and measure all ingredients before cooking. Thai dishes often come together quickly once the heat is on.

      Method

        Mix the filling

        Combine pork, fat, herbs, curry paste, fish sauce and turmeric until tacky.

        Fill the casing

        Stuff the mixture loosely into the casing and coil it, avoiding air pockets.

        Rest

        Refrigerate the sausage for at least 2 hours to firm and develop flavour.

        Grill

        Cook over medium heat, turning often, until browned and fully cooked through.

      What it tastes like

      Herbal, smoky, savoury and warmly spicy with intense northern Thai aromatics.

      Make it milder

      Reduce fresh chillies and chilli paste, remove chilli seeds, and serve extra chilli separately at the table.

      Use locally available equivalents while preserving the balance of salty, sweet, sour, spicy and aromatic flavours.
