Measure, chop and organise all ingredients before cooking. Thai dishes often move quickly once the pan or grill is hot.

Make the sauce
Simmer palm sugar, fish sauce and water until syrupy; cool slightly.

Arrange the fillings
Place all diced and toasted fillings in separate small piles.

Cup one leaf and add a little of each filling.

Spoon over a small amount of sauce, fold the leaf and eat in one bite.
