      Ingredients

      • 4 cups cooked jasmine ricecold
      • 2 tbsp shrimp paste
      • 250 g pork bellysliced
      • 2 tbsp palm sugar
      • 1 tbsp fish sauce
      • 2 eggsmade into thin omelette
      • 1 green mangoshredded
      • 1 cucumbersliced
      • 4 shallotsthinly sliced
      • 2 limecut into wedges
      • 3 chilliessliced
      • 2 tbsp Cooking Oil
      Preparation notes

      Prepare and measure every ingredient before cooking. Thai recipes often move quickly once heat is applied.

      Method

        Make sweet pork

        Simmer pork with palm sugar, fish sauce and a splash of water until glossy.

        Prepare garnishes

        Cook and shred the omelette; slice mango, cucumber, shallots, lime and chilli.

        Fry the paste

        Cook shrimp paste briefly in oil until fragrant.

        Add rice

        Toss cold rice through the paste until evenly coloured and hot.

        Assemble

        Serve rice surrounded by sweet pork and all garnishes.

      What it tastes like

      Intensely savoury rice balanced by sweet pork, sour mango, fresh vegetables and chilli.

      Make it milder

      Reduce fresh chillies and chilli paste, remove chilli seeds, and serve extra chilli separately.
