Cooking instructions

Prepare the ingredients
Trim the chicken thighs and cut into bite-size pieces. Mix the gochujang, ketchup, soy sauce, honey, rice vinegar, garlic, ginger and chilli flakes in a bowl to make the yang-nyum sauce. In a separate shallow bowl, combine the plain flour, cornflour, salt and black pepper.

Coat the chicken
Pat the chicken dry, then add it to the flour mixture. Toss thoroughly until every piece is evenly coated, pressing the coating onto the chicken. Shake off any loose excess.

Fry the chicken
Heat the cooking oil in a deep frying pan or wok over medium-high heat. Fry the chicken in batches for 6–8 minutes, turning occasionally, until crisp, golden and cooked through. Transfer to kitchen paper to drain.

Simmer the sauce
Carefully pour off the frying oil and wipe the pan, leaving only a light coating. Add the prepared yang-nyum sauce and bring to a gentle simmer. Cook for 2–3 minutes, stirring, until glossy and slightly thickened.

Coat the chicken
Return the fried chicken to the pan. Toss thoroughly in the hot sauce until every piece is evenly coated and sticky. Cook for a further 1–2 minutes so the glaze clings to the chicken.

Finish & serve
Transfer the glazed chicken to a serving plate. Scatter over the sesame seeds and sliced spring onion. Serve immediately while crisp and hot, with steamed rice or a fresh crunchy salad if desired.

Useful substitutions
Boneless chicken thigh is widely available from Big C, Lotus’s and Makro. If gochujang is unavailable, use a mild Korean-style chilli paste or a mixture of chilli sauce and a little miso. Korean chilli flakes can be replaced with standard chilli flakes, reduced to taste. Cornflour may be used as the main crisp coating, and palm sugar can replace honey if preferred.

Cool leftovers promptly and refrigerate in an airtight container for up to 2 days.
Reheating
Reheat in an oven or air fryer until piping hot throughout. The coating will soften in a microwave, so dry heat gives the best result. Reheat only once.
