Measure, chop and organise all ingredients before cooking. Thai dishes often move quickly once the pan or grill is hot.

Grill the beef
Season lightly and grill the beef to your preferred doneness; rest before slicing thinly.

Make the dressing
Stir lime juice, fish sauce, sugar and chillies until balanced.

Combine
Toss beef, tomato, cucumber and onion with the dressing.

Finish
Fold through mint and coriander immediately before serving.

Reduce fresh chillies and chilli paste, remove chilli seeds, and serve extra chilli separately at the table.
