Prepare and measure all ingredients before cooking. Thai dishes often come together quickly once the heat is on.

Season the pork
Rub pork with a little fish sauce and rest for 15 minutes.

Cook over high heat until charred outside and just cooked, then rest.

Cut the pork thinly across the grain and retain any juices.

Toss warm pork with lime, fish sauce, rice powder, chilli, shallots, mint and spring onion.
