300 g morning glorytrimmed into lengths

3 bird’s-eye chilliescrushed

1 tbsp yellow bean sauce

1 tbsp oyster sauceor vegetarian sauce

1 tsp light soy sauce

1 tsp sugar

2 tbsp water

2 tbsp Cooking Oil

Mix the sauce
Combine bean sauce, oyster sauce, soy, sugar and water.

Heat the wok
Heat until smoking hot.

Add everything quickly
Add oil, garlic, chilli, morning glory and sauce in rapid succession.

Pat the firm tofu dry, then stir-fry for one to two minutes until wilted but still crisp.

Transfer immediately so the greens do not overcook.
