Measure, chop and organise all ingredients before cooking. Thai dishes often move quickly once the pan or grill is hot.

Blanch the beans
Blanch the beans briefly, then drain so they stay bright and crisp.

Fry the paste
Pat the firm tofu dry, then heat oil and fry the curry paste until fragrant and slightly darkened.

Cook the pork
Pat the firm tofu dry, then add pork and stir-fry until nearly cooked, loosening with a little water if needed.

Finish
Add beans, fish sauce, palm sugar and lime leaves; toss until glossy and fairly dry.
What it tastes like
Savoury, aromatic and moderately spicy with concentrated curry flavour.
Make it milder
Reduce fresh chillies and chilli paste, remove chilli seeds, and serve extra chilli separately at the table.
