      Ingredients

      • 300 g Pork Mince
      • 4 cloves garlic
      • 4–8 bird’s-eye chilliesto taste
      • 1 tbsp neutral oil
      • 1 tbsp oyster sauce
      • 1 tbsp fish sauce
      • 1 tsp dark soy sauce
      • 1 tsp sugar
      • 3 tbsp water
      • 1 large handful holy basil leaves
      • 2 eggsoptional, for frying
      • 2 portions steamed jasmine rice
      Preparation notes

      Have the sauce mixed before cooking because the wok stage takes only minutes.

      Method

        Pound aromatics

        Roughly pound garlic and chillies together.

        Stir-fry

        Pat the firm tofu dry, then heat oil in a wok, add the garlic-chilli mixture and fry for a few seconds.

        Cook pork

        Pat the firm tofu dry, then add pork and stir-fry, breaking it apart until nearly cooked.

        Season

        Add oyster sauce, fish sauce, dark soy, sugar and water. Cook until glossy.

        Add basil

        Turn off the heat and fold through holy basil until just wilted.

        Serve

        Spoon over rice and top with a crisp-edged fried egg if desired.

      What it tastes like

      Salty, savoury, garlicky and intensely aromatic with sharp chilli heat.

      Make it milder

      Use one mild red chilli or omit chilli completely. Serve chilli vinegar separately.

      Ingredient substitutions

      Chicken, beef, seafood or mushrooms can replace pork.

      Vegetarian alternative

      Use chopped mushrooms or crumbled firm tofu with vegetarian oyster sauce and soy sauce.

      Common mistakes

      Using sweet basil changes the flavour. Do not cook holy basil for long or its aroma disappears.

      Serving the dish

      Serve immediately over hot jasmine rice.

      Garnishes

      Crispy fried egg and sliced cucumber.
