      Ingredients

      • 1.2 kg whole chickenspatchcocked
      • 6 cloves garlic
      • 3 roots coriander root
      • 1 tbsp white peppercorns
      • 2 tbsp fish sauce
      • 1 tbsp light soy sauce
      • 1 tbsp palm sugar
      • 1 tsp turmericoptional
      • 2 tbsp Cooking Oil
      Preparation notes

      Prepare and measure every ingredient before cooking. Thai recipes often move quickly once heat is applied.

      Method

        Make marinade

        Pound garlic, coriander root and pepper; mix with sauces, sugar and oil.

        Marinate chicken

        Rub all over chicken and refrigerate for at least four hours.

        Prepare grill

        Set up medium indirect heat.

        Grill slowly

        Cook skin-side up then finish skin-side down until browned and fully cooked.

        Rest and cut

        Rest ten minutes, chop and serve with dipping sauce and sticky rice.

      What it tastes like

      Juicy, smoky and savoury with aromatic pepper and lightly caramelised skin.

      Make it milder

      Reduce fresh chillies and chilli paste, remove chilli seeds, and serve extra chilli separately.
