Whisk eggs vigorously with fish sauce, soy and lime juice until foamy.

Mix in minced pork, breaking it into small pieces.

Pat the firm tofu dry, then pour into very hot oil from a slight height and fry until puffed and golden.

Turn and serve
Flip carefully, cook through, drain briefly and serve over rice.
