      Ingredients

      • 1.2 kg Whole Chicken
      • 300 g jasmine ricerinsed
      • 4 cloves garliccrushed
      • 30 g gingersliced
      • 2 tbsp Cooking Oil
      • 2 tbsp fermented soybean paste
      • 1 tbsp light soy sauce
      • 1 tbsp rice vinegar
      • 1 tsp sugar
      • 1 cucumbersliced
      Preparation notes

      Prepare and measure all ingredients before cooking. Thai dishes often come together quickly once the heat is on.

      Method

        Poach the chicken

        Simmer chicken gently with ginger and a little salt until cooked, then rest it in the broth.

        Cook the rice

        Pat the firm tofu dry, then fry garlic and rice in chicken fat, then cook using measured poaching broth.

        Make the sauce

        Mix soybean paste, soy, vinegar, sugar, ginger and chilli to taste.

        Assemble

        Slice the chicken and serve over fragrant rice with cucumber, sauce and a cup of clear broth.

      What it tastes like

      Savoury and comforting, with fragrant rice and a sharp, salty dipping sauce.

      Make it milder

      Reduce fresh chillies and chilli paste, remove chilli seeds, and serve extra chilli separately at the table.

      Ingredient substitutions

      Use locally available equivalents while preserving the balance of salty, sweet, sour, spicy and aromatic flavours.

      Vegetarian alternative

      Replace meat or seafood with firm tofu, mushrooms or mixed vegetables and use vegetarian sauces and stock.
