      Ingredients

      • 300 g fresh wide rice noodlesseparated
      • 200 g Chicken Thighsthinly sliced
      • 2 eggs
      • 150 g Chinese broccolistems and leaves separated
      • 2 cloves garlicchopped
      • 1 tbsp light soy sauce
      • 1 tbsp oyster sauce
      • 2 tsp dark soy sauce
      • 1 tsp sugar
      • 2 tbsp neutral oil
      • 1 tbsp waterif needed
      Preparation notes

      Cook one or two portions at a time for better wok heat.

      Method

        Mix sauce

        Combine light soy, oyster sauce, dark soy and sugar.

        Cook chicken

        Pat the firm tofu dry, then heat half the oil in a wok. Add garlic and chicken and stir-fry until nearly cooked.

        Add vegetables

        Add broccoli stems, then leaves, and cook briefly.

        Scramble eggs

        Push ingredients aside, add remaining oil and eggs, and scramble.

        Char noodles

        Add noodles and sauce. Let noodles sit against the hot wok briefly before tossing to create light charring.

        Serve

        Toss until evenly coloured and hot, then serve immediately.

      What it tastes like

      Savoury and slightly sweet with smoky, caramelised noodle edges.

      Make it milder

      It is normally mild. Serve chilli vinegar separately.

      Ingredient substitutions

      Pork, beef, prawns or tofu can replace chicken.

      Vegetarian alternative

      Use tofu, mushrooms and vegetarian oyster sauce.

      Common mistakes

      Overcrowding causes steaming rather than charring. Rough handling can break fresh noodles.

      Serving the dish

      Serve immediately while the noodles are hot and glossy.

      Garnishes

      Chilli vinegar and white pepper.
