Measure, chop and organise all ingredients before cooking. Thai dishes often move quickly once the pan or grill is hot.

Make the paste
Process fish, curry paste, egg, fish sauce and sugar until sticky and elastic.

Fold in aromatics
Mix in beans and lime leaves by hand.

Shape
Wet your hands and form small flat patties.

Fry
Pat the firm tofu dry, then fry in medium-hot oil until puffed, golden and cooked through; drain well.
What it tastes like
Savoury, bouncy and aromatic with curry heat and citrusy lime leaf.
Make it milder
Reduce fresh chillies and chilli paste, remove chilli seeds, and serve extra chilli separately at the table.
