      Ingredients

      • 24 Wild Pepper Leaveswashed and dried
      • 1/2 cup toasted coconut
      • 1/3 cup roasted peanuts
      • 2 limesdiced with peel
      • 3 tbsp Gingerfinely diced
      • 3 tbsp shallotsfinely diced
      • 3 tbsp dried shrimpoptional
      • 2 fresh chilliesthinly sliced
      • 3 tbsp palm sugar
      • 2 tbsp Fish Sauce
      • 2 tbsp water
      Preparation notes

      Measure, chop and organise all ingredients before cooking. Thai dishes often move quickly once the pan or grill is hot.

      Method

        Make the sauce

        Simmer palm sugar, fish sauce and water until syrupy; cool slightly.

        Arrange the fillings

        Place all diced and toasted fillings in separate small piles.

        Build a bite

        Cup one leaf and add a little of each filling.

        Finish

        Spoon over a small amount of sauce, fold the leaf and eat in one bite.

      What it tastes like

      Sweet, salty, sour, spicy, nutty and aromatic in a single layered bite.

      Make it milder

      Reduce fresh chillies and chilli paste, remove chilli seeds, and serve extra chilli separately at the table.
