Prepare and measure all ingredients before cooking. Thai dishes often come together quickly once the heat is on.

Prepare the fish
Pat the fish very dry, season lightly and dust with flour.

Fry
Cook in hot oil until crisp and fully cooked, then drain well.

Make the sauce
Pat the firm tofu dry, then fry garlic and chilli, then add tamarind, fish sauce and sugar; simmer until glossy.

Finish
Place fish on a platter and spoon the hot sauce over just before serving.

Reduce fresh chillies and chilli paste, remove chilli seeds, and serve extra chilli separately at the table.
