      Ingredients

      • 500 g pork lointhinly sliced
      • 3 tbsp jungle curry paste
      • 750 ml Chicken Stock
      • 150 g baby aubergines
      • 100 g green beans
      • 1 tbsp fish sauce
      • 1 handful holy basil
      • 1 tsp green peppercorns
      Preparation notes

      Measure and prepare every ingredient before starting. Thai cooking often moves quickly once the pan is hot.

        Fry paste

        Cook curry paste briefly with a little oil.

        Add liquid

        Add stock and bring to a simmer.

        Cook pork

        Add pork and simmer gently.

        Add vegetables

        Add aubergines, beans and peppercorns until tender.

        Finish

        Season with fish sauce and fold through basil.

      What it tastes like

      Lean, herbal, peppery and intensely spicy without coconut sweetness.

      Make it milder

      Reduce fresh chillies and chilli paste, remove seeds, and serve extra chilli separately.

      Ingredient substitutions

      Use readily available equivalents while preserving the balance of salty, sweet, sour and aromatic flavours.

      Vegetarian alternative

      Replace meat or seafood with firm tofu, mushrooms or mixed vegetables and use vegetarian sauces.

      Common mistakes

      Overcrowding the pan, using low heat for stir-fries, and adding all seasoning at once instead of tasting and adjusting.

      Serving the dish

      Serve freshly cooked with steamed jasmine rice or the traditional accompaniment named in the recipe.
