      Ingredients

      • 700 g fresh khanom jeen noodles
      • 500 g firm white fish
      • 2 tbsp red curry paste
      • 1 stalk lemongrasssliced
      • 3 kaffir lime leaves
      • 2 tbsp fish sauce
      • assorted fresh vegetables and herbsfor serving
      Preparation notes

      Measure and prepare every ingredient before starting. Thai cooking often moves quickly once the pan is hot.

      Method

        Poach fish

        Poach fish gently until cooked; reserve liquid and flake flesh.

        Make curry base

        Blend or pound fish with curry paste and aromatics.

        Simmer sauce

        Cook paste with coconut milk and enough poaching liquid for a pourable curry.

        Season

        Balance with fish sauce and sugar.

        Serve

        Spoon curry over noodles and offer plenty of fresh vegetables.

      Creamy, aromatic and savoury with a distinctive fish-curry depth.
