Measure, chop and organise all ingredients before cooking. Thai dishes often move quickly once the pan or grill is hot.

Prepare the broth
Bring stock to a gentle simmer and cook the pork until done.

Cook the noodles
Blanch noodles and bean sprouts separately, then divide among bowls.

Season each bowl
Add fish sauce, lime, chilli paste, sugar and peanuts to each bowl.

Ladle over hot broth and pork, stir well and garnish with herbs.
