Measure, chop and organise all ingredients before cooking. Thai dishes often move quickly once the pan or grill is hot.

Cook the prawns
Pat the firm tofu dry, then stir-fry prawns briefly until almost cooked, then remove.

Scramble the eggs
Add eggs to the wok and scramble until just set.

Fry the rice
Add rice and curry powder; toss over high heat until hot and separated.

Finish
Return prawns and add pineapple, sauces, cashews and raisins; toss quickly and serve.
What it tastes like
Savoury-sweet and gently spiced with juicy pineapple and toasted cashews.
Make it milder
Reduce fresh chillies and chilli paste, remove chilli seeds, and serve extra chilli separately at the table.
