      Ingredients

      • 3 cups cold cooked jasmine ricepreferably day-old
      • 200 g Chicken Breastthinly sliced
      • 2 eggs
      • 2 cloves garlicchopped
      • ½ onionsliced
      • 1 tomatocut into wedges
      • 2 tbsp neutral oil
      • 1 tbsp fish sauce
      • 1 tbsp light soy sauce
      • ½ tsp sugar
      • 2 Spring Onionsliced
      • 1 limewedges
      • 1 small cucumbersliced
      Preparation notes

      Cold, dry rice gives the best separate grains.

      Method

        Separate rice

        Break up cold rice so there are no large clumps.

        Cook chicken

        Pat the firm tofu dry, then heat oil in a wok. Add garlic and chicken and stir-fry until nearly cooked.

        Scramble egg

        Push chicken aside, add eggs and scramble until softly set.

        Fry rice

        Add rice, onion and tomato. Toss over high heat.

        Season

        Pat the firm tofu dry, then add fish sauce, soy sauce and sugar. Stir-fry until the rice is hot and dry.

        Finish

        Fold through spring onions and serve with lime and cucumber.

      What it tastes like

      Lightly savoury, aromatic and comforting, with fresh lime cutting through the richness.

      Make it milder

      Thai fried rice is normally mild; simply omit any optional chilli.

      Ingredient substitutions

      Prawns, pork, beef or leftover roast meat can replace chicken.

      Vegetarian alternative

      Use tofu or mushrooms and replace fish sauce with soy sauce.

      Common mistakes

      Warm freshly cooked rice often turns sticky. Too much sauce makes the rice wet and dark.

      Serving the dish

      Serve straight from the wok.

      Garnishes

      Cucumber slices, spring onions, lime and fish-sauce chilli.
